Recipe: Bacon-Wrapped Pork Fillet with Caramelised Apple


2 x 300g (10.5oz) pork fillets, trimmed and halved
2 garlic cloves, crushed
2 tbsp seeded mustard
1 tbsp olive oil
Sea salt and cracked black pepper
2 red apples, cored and sliced
1 tbsp brown sugar
2 rashers bacon trimmed and halved


Preheat the oven to 180C (355F). Place the pork, garlic, mustard, oil, salt and pepper in a bowl and toss to coat. Set aside.

Place the apple on a baking tray lined with baking paper and sprinkle with the sugar. Wrap each piece of pork with the bacon and place on top of the apple. Roast for 30 minutes or until the pork is cooked through and the apples are caramelised.
