Recipe: Peanut noodles with pork

Ingredients

250g medium egg noodles
2 tbsp olive oil plus extra for greasing
4 pork escalopes
50g/2oz salted peanuts
1 garlic clove, finely chopped
bunch of spring onions, sliced
100g/4oz bean sprouts

Instructions

1. Boil the noodles according to packet instructions. Meanwhile, heat a griddel pan and brush a little oil. Season the escalopes, then griddle for 2-3 minutes on each side until cooked through.

2. Put the peanuts in a plastic food bag and crush roughly with a rolling pin. Drain the noodles

3. Mix together the olive oil, soy sauce and garlic, then toss with the noodles, spring onions, beansprouts and peanuts, and season with a little black pepper. Divide the noodles between four plates and top with the pork.
