Recipe: Bistecca alla florentina (Florentine T-bone Steak)


1 T-bone steak brought to room temperature
Black pepper freshly milled


Fire up your barbecue. Lay the steak on a rack and, when the charcoal is white-hot (it should be glowing but without flames) barbecue it until a good crust has formed. This should take around 3 minutes. Then, without piercing the meat, turn it over with a fork. Season the grilled side with salt. Grill the other side for a similar length of time until a crust has formed. The meat inside should still be rare. Remove from the heat, season with salt and pepper and serve immediately.
